TGIF/ the lottery

Well I'm sure glad its Friday. Its been a long week at work and I'm ready to do nothing important. A lot of people are at United Blood in Richmond this weekend, but I couldn't really afford to take the time off work and go since I'm saving for Texas. I'm assuming it will be a quiet weekend.




Well the country is a buzz with Mega Millions hitting a record breaking $640 million dollars. Now we are suckers in Massachusetts and spend the most of our income on the lottery, I am totally one of those suckers. I play the lottery almost everyday and have only won money on scratch tickets, but for a dollar or two I'm willing to try to win the bigger games.

Last weekend was busy! + Walking Dead rant

On Friday after work I rushed home and then headed out to get Brett at the airport. Once his plane landed we headed to Cambridge for the Rival Mob show at the Democracy center. The show was pretty fun, every band was really good except for the 2nd one. After the show Brett, Garvey, Mike, Kara, Erin, Cody and I headed to Regina's in Allston for $1 slices of pizza. I hate when places make you order a drink for the cheap food, I only drink water so its always a pain for me. We dropped Brett off at Pearse's house then we headed back to Stoughton.
Saturday morning Kara and Cody got to my house then us four headed to get Jesse in Providence. Then we were off the Casino!

Sunday I met up with Stephen, Brad, Cody, Kara and Erin to walk around and get some lunch. We went to four burgers in Central Sq. then walked over to Harvard sq. after. It was so nice out!



I even got to wear shorts!


Well then night time came and The Walking Dead finale started...........
First off, how funny and true is this?!


Well I was ready for all hell to break loose on the farm and I was interesting how they were going to do this. First of all Hershels shot gun has unlimited ammo I think? I don't know if he ever reloaded haha. Jimmy why didn't you drive away when they were on the roof?! YOU FOOL! I liked how they showed that the walkers were following the helicopter, because at the end of last episode I did't understand why there were so many in the woods right near the farm. Then there should have been more knives and axe killing. The girls except for Andrea were so useless and could have been killing. LORI.......shut the hell up! She makes every scene that she is in so annoying. Maggie and Glenn are pretty awesome and I have nothing bad to say about them. Poor Andrea getting left behind... even though she saved Carol. LOL at Daryl riding around on this bike that is loud as hell and none of them followed them to the highway? WHY DID TDOG JUST NOT DO A THREE POINT TURN?! I think I was laughing my ass off when he did this wide ass uturn into that ditch, I didn't that that POS truck was going to make it out of it back on the highway.
Rick was being such a bitch on the highway and it was so annoying, Carl is such a bad actor that its also hard to watch. It was cool watching Andrea kick so much ass in the woods by herself and I was just waiting for it to happen.... then it happened.......MICHONNE!!!!!!!!!!! YES! I was so excited to finally see her in the show and I can't wait to have her in the show, because they need someone with a backbone in this god damn group.

At least Mad men is back so I don't have to get mad at the Walking Dead until Oct.

The past couple days

Well on March 25th I start softball practice, last year I almost passed out during the first practice. I knew I had to condition myself a little before this year. I've been going to the gym, but that doesn't compare to playing.
Yesterday Pete and I headed out to a field near my house and played catch for a while. After catch he tried throwing me some grounders, but going up and down fielding just makes me so light headed, I could only do it for a few minutes. Then I got some batting practice in and I was hitting the ball okay.
After that I bought new batting gloves, my old ones had holes in them and they were so old. They were even mismatched!

There is a new show on tv called Missing, it has Ashley Judd in it. I figured I'd check it out since I'm home and always looking to watch new shows. Its about a former CIA agent and her son gets kidnapped while he is in school in Rome. Its slightly cheesey borderline could be on lifetime, but its decent so far. I might stick with it.

Well I was poking around online and I saw the Dolce Vita shoes I wanted. They were half off on Nordstroms site! I had to get them and hope that the size 4 would fit me, I'm normally a 3/3.5, but I figure to go up in size to be safe. If it didn't work out I could always return them in store.

Oatmeal cookie cupcakes

I was inspired by this recipe over at Peas and Thank You

Ingredients (Makes 12-18 cupcakes)

1 c. old fashioned oats
1 1/4 c. boiling water
1/4 c. coconut oil
1/4 c. almond butter
2/3 c. unsweetened applesauce
1 c. organic sugar
1 t. vanilla
1/2 c. whole wheat pastry flour
1 c. all-purpose flour
1/2 t. baking soda
1 1/2 t. baking powder
1/2 t. salt
1 t. cinnamon
1/2 t. nutmeg

I subbed Earth Balance soy free spread melted for the coconut oil and Sunbutter for the almond butter.
I'm allergic to coconut and almonds, but my subs worked fine.
I also added 1/4 cup of Enjoy Life chocolate chunks and 2/3 cup of craisins.

“Cream Cheese” Frosting:

4 oz. vegan (i.e. Tofutti) or organic cream cheese
3 T. vegan margarine (i.e. Earth Balance)
dash of salt
1/4 t. vanilla extract
2 c. powdered sugar
optional: toasted coconut and pecans for garnish

I used regular cream cheese and used a craisin for garnish.

Instructions

Preheat oven to 350 degrees.

In a small bowl, cover oats with boiling water and set aside for 15-20 minutes, until water is absorbed.
Meanwhile, beat together coconut oil, almond butter, applesauce, sugar and vanilla until combined.
In a separate bowl, combine flours, baking soda, baking powder, salt, cinnamon and nutmeg.
When oatmeal is ready, mix it into the wet mixture, and slowly add flour mixture to the batter, stirring until incorporated.
Spoon batter into a muffin tin that has been sprayed with cooking spray or lined with papers.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool completely.
For frosting, beat together cream cheese, margarine, vanilla, salt and powdered sugar.
When cupcakes are cool, frost and top with coconut and pecans, if desired.

Recipe I want to try

Whoa I just saw this on Food Network's facebook and I just got wide eyed.

In reality I was really only curious on how they make something like the middle of an oreo, thats where the real magic happens.



For the Dough:

1 1/3 cups Dutch-process cocoa powder
1 1/2 cups all-purpose flour, plus more for dusting
1/4 teaspoon salt
2 sticks unsalted butter, softened
2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract

For the Filling:

1 stick unsalted butter, softened
1/2 cup vegetable shortening
3 cups confectioners' sugar, sifted
1 teaspoon vanilla extract

Directions

Prepare the dough: Sift together the cocoa powder, flour and salt in a large bowl.

Using a mixer, cream the butter and sugar. Add the eggs one at a time, then the vanilla, incorporating each ingredient before adding the next. Add the dry ingredients and mix just until incorporated, scraping the bottom of the bowl with a rubber spatula.

Divide the dough into 2 pieces; place one piece between 2 lightly floured sheets of parchment paper and roll into a 1/4-inch-thick rectangle. Repeat with the other piece of dough. Refrigerate both rectangles, covered with the parchment sheets, until firm, at least 1 hour or up to several days.

Using a 2-inch round cutter, cut the dough into 64 circles. (You can reroll the scraps once.) Place the cookies about 2 inches apart on ungreased baking sheets and chill for 20 minutes. Preheat the oven to 325 degrees.

Bake the cookies until they are set and slightly darker around the edges, about 20 minutes. Cool completely on wire racks.

Meanwhile, prepare the filling: Using a mixer, cream the butter and shortening until fluffy. Beat in the confectioners' sugar and vanilla.

Flip half of the cookies upside down and top each with 1 level tablespoon of filling. Press the remaining cookies on top to make sandwiches.


***If I try anything from this, I would probably just make the filling haha.

TGIFFFFFFFF HELLO

Well it is finally Friday and it is almost time to leave work. I think I might reward myself with a small piece of fudge for making it through the week. :P

I have been going to the gym lately and I've been pretty good with going and sticking with it. I've been doing a mix of some pool classes and some cardio things. I've lost some weight! Go me! I've been using this app called "Lose it" and its awesome.

A Gloucester adventure from a couple weeks ago

Well... my blogging app on my phone wasn't working so I kind of lost my easy way of getting pictures to my computer. I finally deleted it and reapplied it so TA DA now it works.

A couple Saturdays ago Garvey and I headed to Gloucester for a day adventure. We wanted to go record shopping and I wanted to poke around the shops on Main St.
We decided to stop at the Candy House and it smelled so wonderful in there, I got a couple of candies and Garvey got a chocolate covered twinkee. Gloucester is pretty so I took a picture of next to the candy store.









Our first stop was Mystery Train record store. I didn't have a ton of luck when looking through the LPs, I decided to tackle the 45s. After digging I found a couple of gems and I just couldn't dig anymore.



We walked around and stopped in a couple of shops and I actually found a cute bracelet along our travels. Its been so nice out here, but that day it was SO WINDY. I was being pushed by the wind and it was hard to walk at times.
We were starving and we were close to Woodmans so we decided to head over to Essex for lunch.

6. Right now I could really go for: A cupcake from Treat, I've been fairly good with healthy eating, but I'd kill for one of those.

7. This weekend I will be: Heading to the show at the Democracy Center tonight and watching my shows on Sunday night.
